The Red Iapar is one of the seven varieties that Henrique Sloper, member of Return to Terroir, grows in his plantation in the South East Brazilian in the Espirito Santo. The plantation is located in the preserved region of Pedra Azul. Covering many hills over 370 acres of woods, the plantation is organized in plots of single variety.
In Brazil, first producer of coffee in the world, only few plantations are bio-dynamic, fewer still are of real quality. Camocim, known worldwide for its Jacu Bird, is the spearhead of this movement. The Iapar Red blossoms in a eucalyptus forest. It is handpicked, sorted many times and sun dried after having had the pulp removed from the bean.
