In 2015, Pierre Hermé asks Hippolyte Courty, founder of l’Arbre à Café to taste this tarte. And while Hippolyte enjoys the recipe, he can’t find the flavours of coffee, the same flavours for which he travels the world and roams coffee farms. He suggest a collaboration, with l’Arbre à Café offering him their expertise and guiding him through the world of coffee.
Out of this culinary dialogue between two taste enthusiasts will emerge 24 creations, in a collection named Fetish Infiniment Café. With great care and precision taken in the roasting, grinding, infusion of each coffee according to its characteristics, Pierre Hermé unveils their character, terroir and nuances in his creations.
When Pierre Hermé decides to open 86CHAMPS, he naturally places coffee at the heart of the project, and turns to L’Arbre à Café to assist him in creating a new experience of coffee.
In collusion with Hippolyte Courty, the pastry chef elaborates exclusive and original recipes inspired by the world of coffee. Starting with three varieties (including one decaffeinated) Pierre Hermé imagined sixteen different ways to enjoy a delicious coffee.

Iapar rouge, from Brasil, is both powerful and round, its nuances consisting of chocolate, cinnamon and spices, topped off with a dynamic eucalyptus aroma. Already used in Pierre Hermé’s pastries, it asserts itself as the signature and permanent coffee for Pierre Hermé Paris.
To accompany it, Grands Crus, each with their own gustatory realm, will take place by its side seasonally. Finally Cascara and Green coffee beans will be available in various forms, to savour coffee in other ways.
L’arbre à Café put together the best equipment, techniques, and team to create exclusive signature drinks, that fit perfectly in the Pierre Hermé universe : Ispahan Latte, Infiniment Noisette Coffee, Pierre Hermé Paris Mocha, Café Crème cappucinno style, Cascaccino or Coffee Virgin Mojito (Coffee, mint, cane sugar and lime). The caffeinated drinks become a profusion of emotions, extending harmoniously Pierre Hermé pastries, playing with taste, texture and colors, and always an explosion of aromas.
86 CHAMPS : a new address, to discover from december 8th, 86 avenue des champs elysées : an unprecedented and inspired encounter between the art of perfume and that of the pastry chef. A poetic break in the middle of the Parisian winter. Imagine a haven of well being and indulgence in the middle of the world’s most beautiful avenue. This was the challenge that L’Occitane and Pierre Hermé tok on at the start of 2017. With 86Champs, the two houses unite their expertises and beliefs, in the service of delight: a place to explore with every sense.
