Pérou, typica variety. The Typica Red Honey is an exclusive coffee with a mouthfeel cup and red fruits aromas.
One variety, three process : washed, natural and honey.
Typica was born at the hands of History. The first Arabica variety to arrive on the coasts of mid-and-south america, Typica is a testimony of what coffee could have been like at the start of its worldwide diffusion. Valued for its floral notes and its delicacy, it reveals best its complexity when grown at high altitude.
Sensitive to modern diseases, and not the most productive, it was gradually left aside for modern hybrids. Today, a few dedicated farmers a reinstating this heirloom variety.
Our collaboration with the Marin family, from Chakra d’Dago takes multiple forms, including variety selection and fermentation choices. We isolated Typica coffee trees and put the fully ripe cherries through three different fermentation processes : washed, natural, and honey.
Chakra d’Dago’s Typica offers all the expressivity of Typica from the amazonian forest. The diverse processes enable to reveal all of its aromatic range. All in all, an exceptional coffee.
