The early Icatu is considered as a complementary and new variety. Yet, as it is cultivated in a dedicated area with the same care as other more prestigious varieties, it is able to express what makes its best: delicacy and sweetness.
Early Icatu is one of the seven varieties that Henrique Sloper, member of Return to Terroir, grows in his plantation in the South East Brazilian in the Espirito Santo.
The plantation is located in the preserved region of Pedra Azul. Covering many hills over 370 acres of woods, the plantation is organized in plots of single variety.
The Early Icatu, a yellow variety, blossoms in a eucalyptus forest. It is handpicked, sorted many times and sun dried after having had the pulp removed from the bean.
