Indigenous washed varieties, Yirgacheffe, Ethiopia. The ultimate expression of Yirgacheffe: bouquet of jasmine. Brew methods.
The Adado is typical of the greatest Yirgacheffe: apricot, peach, nectarine and jasmine aromas. Notes of lemon come to strengthen its liveliness. The aromatic complexity of indigenous varieties and the natural treatment render the Adado into a light, very aromatic coffee.
Yirgacheffe is the region which produces the most prestigious coffees of Ethiopia. The coffee gardens are cultivated on the high plateaus of Western Ethiopia reaching up to 2 000 meters of altitude. Organized around treatment stations, the inhabitants called Gedeos, handpick the cherries at maturity and process them collectively.
The winter of 2014-2015 has been difficult for coffee cultivation in Ethiopia, which is why it is difficult to find the quality you might expect. All of the expertise and the knowledge of the Gedeos are needed to reach such high qualities this year.
