If there's a special place in the world of coffee, it's Sidama. A few hundred kilometers south of Addis Ababa, Sidama is the region of coffee gardens. Whereas Guji , its neighbor, is the region of forest coffees, Sidama is home to a thousand and one walled gardens in the immediate vicinity of houses. The mixed-crop growers use domestic compost on a daily basis. The result is abundant coffee trees and cherries bursting with sugar and aroma. Saio is an ode to this authentic coffee culture.
